Vegetarian Gumbo

Adapted from SeriousEats and the Tassajara cookbook

Ingredients

  • 1 Cup Vegetable Oil

  • 1 Cup AP Flour

  • 2 large yellow onions

  • 2 green bell peppers

  • 4 large celery ribs

  • 8 garlic cloves

  • 1 lb fresh okra

  • Scallions for serving

  • Collard greens?

  • Red beans?

  • Mushrooms?

  • 1/4 tsp cayenne

  • 2 dried bay leaf

  • 2 large sprigs fresh thyme

  • 1/2 tsp File Powder

  • Tony Cacheres?

  • Hot sauce (crystal or Louisiana brand, tabasco second) for serving

  • Smoked paprika

  • Thyme

  • Sage

  • Black pepper

  • Cayenne pepper

  • Beyond sausage

  • Shrimp

  • Rice for serving

Directions

  • Cook the sausage simultaneously in cayenne, paprika, thyme and sage

  • Put the sausage to the side

  • Make the roux

  • Add the trinity vegetables and cook down in the roux

  • Add the spices

  • Add the vegetable broth, re-add the sausage

  • Cook down for ~two hours

  • Add sauteed shrimp if you desire

  • Serve over rice
